Ingredients
  

  • 1 cup ripe mangoes diced (fresh or frozen)
  • 1 cup peach slices chopped (fresh, canned, or frozen)
  • ¼ cup granulated sugar
  • 1 tbsp cornstarch for thickening
  • 1 tsp lemon juice to balance sweetness
  • 2 cups all-purpose flour
  • ½ tsp salt
  • 4 tbsp cold butter cut into cubes
  • ½ cup cold water
  • Oil for deep frying or air frying option below

Instructions
 

  • In a saucepan, combine diced mangoes, peaches, sugar, and lemon juice. Cook over medium heat until fruits soften. Stir in cornstarch and cook until the mixture thickens into a jam-like texture. Let it cool.
  • In a mixing bowl, combine flour, salt, and cold butter. Use your hands or a pastry cutter to form coarse crumbs. Add cold water gradually until dough forms. Chill for 15 minutes.
  • Roll out dough into thin sheets. Cut into rectangular pieces. Spoon 1–2 tablespoons of fruit filling in the center of each piece.
  • Fold dough over the filling and seal edges with a fork. Make sure no filling leaks out.
  • Deep fry in hot oil (around 350°F / 175°C) until golden brown – about 2–3 minutes per side. For air fryer: cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Drain excess oil on paper towels. Serve warm – crispy on the outside and gooey inside, just like Jollibee’s original version!

Notes

To Store: Let pies cool completely, then place them in an airtight container. Store in the refrigerator for up to 3 days. To Freeze: Wrap unbaked pies in parchment paper and freeze for up to 1 month.
