Ingredients
  

  • 2 ¾ cups flour
  • 1 tsp. salt
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup sugar
  • 2 sticks butter
  • 1 heaping tbsp. light brown sugar
  • Extra sugar for rolling cookie balls

Instructions
 

  • In a bowl, use a hand mixer and mix 1 cup of sugar and 1 heaping tablespoon of light brown sugar with 2 sticks of room temperature butter until light and fluffy.
  • Mix in 2 teaspoons of vanilla extract and 1 egg until well combined.
  • Sift in 2 ¾ cups of flour, 1 teaspoon of salt, ½ teaspoon of baking powder, and 1 teaspoon of baking soda. Gently fold until fully combined. Be careful not to over mix.
  • Use a cookie scoop or measuring spoon to portion out dough and roll into balls. Roll each ball in extra sugar.
  • Place the sugar-coated balls onto a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until the bottoms are light golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.

Notes

Room Temperature Storage: Place the completely cooled cookies in an airtight container or resealable plastic bag. They'll stay fresh for up to 5 days at room temperature.
Refrigerator Storage: For longer storage, place the cookies in an airtight container and refrigerate them. They'll keep for up to 7-10 days in the fridge.
